If you are looking for a condiment that says Autumn, pumpkin butter is it! This is quick and easy recipe is truly versatile. Mixed in with yogurt, as a sauce for poultry, or as a topping for your grain free biscuits, it is a healthy treat.
1 ½ Cups of homemade or Organic Canned Pumpkin Puree
½ Cup Maple Syrup
¼ Cup Apple Cider (not apple juice)
1 Tablespoon Freshly Squeezed Lemon Juice from an Organic Lemon
1 ½ teaspoons Organic Ground Ginger
1 ½ teaspoons Organic Ground Cinnamon
1 teaspoon Organic Ground Nutmeg
¼ teaspoon Organic Ground Allspice
¼ teaspoon Organic Ground Cloves
Dash of Celtic Sea Salt
Place all ingredients in a medium sized sauce pan.
Stir to incorporate and heat over a medium heat until the sauce begins to boil
Reduce heat and continue cooking over a low heat.
Simmer until sauce is thickened (approximately 15 to 20 minutes).
Pumpkin Butter will continue to thicken as it cools.
Refrigerate in an airtight container, pumpkin butter will keep for a week.
