Tweaked Version of PaleOMG’s: Giant Vanilla Bean Chocolate Chunk Cookies (nut-free)

The D-Man Enjoying PaleOMG’s Giant Vanilla Bean Chocolate Chunk Cookie

The D-Man was craving Chocolate Chip Cookies the other day so we decided to try the recipe from PaleOMG. We tweaked it just a bit, but the cookies are incredible. Free of nuts, grains, and refined sugars….What a great after school snack (or breakfast, the D-Man likes the idea of cookies for breakfast). This recipe is quick and easy and my little man who is becoming quite proficient in the kitchen had these cookies baking in no time flat.

WARNING: I love this blog but her posts may be a bit racy for some of my gentle readers. That being said Juli is incredibly creative; has a great sense of humor, and her Paleo recipes are fantastic! Ingredients:
1 Cup Sunflower Seed Butter (or nut butter)
1/3 Cup Raw Honey (melted if solid)
1 Pastured Egg, whisked
2 Vanilla Bean Pods, slit lengthwise, and scrape out the seeds with the edge of your knife.
2 teaspoons Vanilla Extract
½ teaspoon Ground Cinnamon
¼ teaspoon Ground Ginger
Dash of Ground Cloves
Dash of Ground Cardamom (the D-Man’s Suggestion)
½ teaspoon Baking Soda
½ teaspoon Baking Powder
Pinch of Celtic Sea Salt
½-1 cup Enjoy Life Mega Chocolate Chunks (or dark chocolate chips)

Instructions:
Preheat oven to 350 degrees.
Place all ingredients in a large bowl and mix well (I used and electric hand mixer).
Line a baking sheet with parchment paper.
Use an ice cream scoop to dollop out the cookie dough onto the baking sheet. (I used a scoop that holds 2 Tablespoons)
Make sure to space the cookies at least 2 inches apart as they will spread.
Bake for 15 – 18 minutes; watch them carefully as baking times will vary.
Cool on the baking sheet and enjoy!
