ORAC, Oxygen Radical Absorbance Capacity

Oxygen Radical Absorbance Capacity (ORAC) is a method of measuring the total antioxidant capacity of foods and spices.   The ORAC Scale measures the antioxidant activity of a food or spice rather than the levels of specific nutrients.  It is believed that foods higher on the ORAC scale will more effectively neutralize free radicals, slowing the oxidative processes that can contribute to age-related degeneration and disease.
