Chocolate Pudding made from Avocado, you bet! I’m sure the majority of you are thinking that it sounds disgusting, but I assure you it is absolutely delicious and incredibly healthy. This recipe can also be prepared in 5 minutes, so it’s perfect for those who are crunched for time.
Avocados have been demonized because of their high fat content (about 85% of their calories come from fat), but the majority of the fat contained in avocados comes from Phytosterols which help keep inflammation under control. Avocados also contain Oleic Acid (think Olives and Olive Oil). Oleic Acid is a monounsaturated fatty acid which works with our digestive system transporting molecules that increase our absorption of fat-soluble nutrients like the carotenoid antioxidants such as lutein. A great source of Omega-3 Fatty Acids, (Alpha-Linolenic Acid), and also a wonderful source of Pantothenic Acid, Fiber, Vitamin K, Copper, Folate, Vitamin B6, Potassium, Vitamin E, and Vitamin C.
There are many versions of this “faux pudding”, but the recipe I am sharing with you today is the one that my family enjoys, I hope you will too!
3 Medium Ripe Organic Avocados (use 4 if they are small)
2 teaspoons Organic Ground Cinnamon
1 teaspoon Organic Ground Ginger
Dash of Organic Ground Cloves
Heaping ¼ Cup Raw Cacao Powder or Cocoa Powder
½ Cup Liquid Sweetener (Raw Honey, Coconut Nectar, or Maple Syrup)
2-3 Tablespoons Organic Coconut Oil
Pinch of Sea Salt
1 Tablespoon Vanilla Extract
2 teaspoons Organic Chocolate Extract (optional)
½ Cup Chocolate Chips (Optional)
Place all ingredients into a food processor or blender.
Blend ingredients until well combined.
Taste and adjust spices or sweetness level if needed.
Using a spatula scrape the pudding from the food processor into a medium sized bowl.
OPTIONAL: Stir in the chocolate chips
Cover the bowl with a lid or wrap and chill until ready to serve.
