Sometimes life calls for something special, and these decadent treats certainly fit the bill. Vegan truffles that can be prepared quickly with the minimum effort. Seriously, I made these in 15 minutes! I would like to tell you how many truffles this recipe yields but the D-Man got into the cookie dough before I began this project.
1 Roll of Cappello’s Chocolate Chip Cookie Dough (or your favorite Vegan recipe)
1 Cup Enjoy Life Chocolate Chips (or your favorite chocolate)
Line a cookie sheet with parchment paper.
If the cookie dough is frozen, thaw per package instructions, then unwrap the roll of dough.
Scoop 1 Tablespoon of the cookie dough (I used a small cookie scoop) and roll into a ball.
Place each ball of dough on the prepared cookie sheet.
NOTE: If the cookie dough is very soft refrigerate the dough for 5 minutes before proceeding to the next step.
In a small saucepan melt the chocolate over very low heat.
Using a fork, dip the balls of dough into the melted chocolate and place on the parchment lined cookie sheet.
OPTIONAL: Sprinkle with Sea Salt, Nuts, Unsweetened Coconut Flakes, or Raw Cacao.
Place Truffles in the refrigerator until the chocolate has set, approximately 10 to 15 minutes, but the longer you wait the better they are.
