No Peanut Chocolate Covered Eggs

 

 

This is a super simple recipe and it can be shaped any way you like.

Ingredients:

1 1/2 Cups Nuttzo or Sunflower Butter (I blended 1 cup of Nuttzo with 1/2 Cup Sunbutter)

2 Tablespoons Desiccated Coconut (you can also use Cassava or Coconut Flour)

3 Tablespoons Organic Maple Syrup

1 Tablespoon Vanilla Extract

1 1/2 Cups Chopped Chocolate or Enjoy Life Chocolate Chips

Directions:

Line a baking sheet/cookie sheet with parchment paper.
In a medium sized bowl mix all the ingredients together (except the chocolate chips).
Scoop out approximately a Tablespoon of dough and roll into balls.
Shape the balls into the shape of eggs and place on the lined cookie sheet.
Place the cookie sheet with your shaped dough into the refrigerator for 10 to 30 minutes.
In a small saucepan or double boiler melt the chocolate over very low heat.
Remove cookie sheet from the refrigerator while the chocolate is melting.
Using a fork, dip your egg into the melted chocolate until the dough is covered then gently place it onto the parchment lined cookie sheet.
Repeat with the remaining dough until all of the eggs are coated.
Place the cookie sheet with your chocolate covered eggs in the refrigerator to set.
