Grain Free Pizza Crust

Are you gluten and grain free and yearning for pizza?  Here is a simple recipe for a healthy pizza crust that is a crowd pleaser!

The D-Man loves Pizza, then again, most people do.   In the past I made gluten free pizza crust from a rice flour blend, but a year ago we eliminated all grains from our diet.  Since then pizza nights have been a lackluster event.  I tried dough made from coconut flour, dough made from bean flours (not easy for the D-Man to digest), none of these really worked well, or they were labor intensive.  I finally hit pay dirt with this healthy, quick and easy recipe.  This dough takes less than 10 minutes to prepare, and no special tools are needed….I whip this up with a fork!  This recipe produces a thin and crispy pizza crust which holds up to tons of toppings!  So, for those who are grain free, or striving to eliminate grains from your diet, this recipe is for you.

2 Large Pastured Eggs (room temperature)
1 ½ Cups Almond Flour (packed)
¼ Cup Tapioca Starch
4 Tablespoons Organic Virgin Coconut Oil (melted)
1/3 Cup Grated Parmesan Cheese (packed)
¼ teaspoon Celtic Sea Salt
3 teaspoons Organic dried Italian Seasonings
1 teaspoon Organic dried Basil
1 teaspoon Organic dried Oregano
1 teaspoon Organic dried Onion Powder
2 small cloves of fresh Organic Garlic (minced)

* Note:  I add more seasonings for my family *

In a medium sized bowl beat eggs slightly with a fork.
To the eggs add:  Parmesan Cheese and Spices;  mix to combine.
Add Almond Flour, Tapioca Starch and Coconut Oil, mixing until a dough is formed.
Press dough onto a 12 inch Pizza Pan, using a sheet of parchment paper to prevent the dough from sticking to your hands.
